Divide the fillet into two parts and make a "pocket" in each one. Slightly salt and pepper the meat from the inside and set it aside.

Easter turkey with cranberry and orange sauce

The sauce:
Mix ½ cup of orange juice, tangerine slices, cranberries, sugar, salt and pepper and cook for about 2 minutes. Add a teaspoon of starch.

Boil the turkey fillet (for approximately 5 minutes), then add the prepared sauce. Simmer for about 15 to 20 minutes. Remove from the heat when ready. Pour the remaining orange juice.
